Just as Russian honey cake, pastila quickly caught fire and got regional development. Kolomenskaya and Rzevskaya pastilas were the most famous and of the best quality in all Russian Empire. In particular,pastila in Kolomna has been made from apples for more than three hundred years and it was hand-made. The process included whipping apple puree with egg whites and drying the paste in a stove. The finished product could be stored for many years to come. In 1735 the first pastila factory was set up(it was called "pastilnaya").
